Redundant by now, no doubt, but I'd like to throw in my vote for Soldier. You're outdoorsy and you don't mind doing physical stuff, which kind of makes me lean towards one of the more physical classes... what made me think of Soldier, though, was how you say you're adaptable and you seem to really like a wide variety of things... I think Soldiers come in many, many varieties and with many different kinds of personalities and specialties, so you'd be happiest doing something like that.
